Ingredients
1/2 cup milk
6 tbsp butter
1 1/2 tsp yeast
2 cups flour
3 tbsp sugar
1 tbsp grated lemon zest
1 tsp salt
1 tsp vanilla
3 egg yolks
1/2 cup raisins
Directions
1.Heat the milk in a small saucepan or microwave until bubbles form around the edges
2.Remove from heat and add butter. Stir until dissolved. Cool to room temperature
3.In a bread machine, according to manufacturer’s instructions, add ingredients except raisins.
4.Process in dough cycle.
5.Grease 2 tall cans (juice or coffee cans work well) and line bottom with parchment paper.
6.Remove dough from bread machine and knead in raisins.
7.Form dough into a ball to fill no more than half the can and place inside can.
8.Let rise to top and bake at 350ºF for 30 minutes or until done.
9.For the last 10 or 15 minutes cover with parchment paper to keep top from burning.
10.Place the babka to cool on its side on a soft blanket, pillow, or towel and roll the babka over a few times while cooling to prevent the roll from flattening.
11.Remove from cans and glaze with a beated egg mixed with 1 tsp sugar.
12.If desired, ice the top and decorate with sprinkles.
